Pour oil into a skillet, then heat. Sprinkle salt, pepper, and sage on the pork. Place in the skillet and brown on each side. Mix in water and garlic, then reduce heat to medium. Cover, and cook for 15 minutes. When done, sprinkle parsley on top, slice the pork, and serve.
